Fresh, Dried or Preserved? Choosing the Right Agaricus Supply Format for Your Market

Two parallel trade lanes

Agaricus bisporus moves through world trade in two distinct lanes:

• Fresh / chilled (HS 070951) — roughly USD 2.45 billion of imports in 2024, led by the United States, the United Kingdom and Germany. China exported about USD 374 million, mostly to Vietnam, Thailand, Indonesia, Malaysia, Japan, Korea and Singapore.

• Prepared / preserved (HS 200310) — roughly USD 1.05 billion, led by the United States, Russia, France and Germany. China is the dominant origin with about USD 433 million of exports.

How to choose

Choose fresh when your market is within air-freight or short sea range and your channel is retail produce or foodservice. Fresh commands the highest unit value and rides the plant-based wave — but shelf life is measured in days, so partner reliability matters more than price.

Choose preserved (canned, brined) when you supply retail shelves, private label or foodservice in distant markets. Sterilised formats travel for months, tolerate ambient logistics, and suit tender-based contracts.

Choose dried / sliced for food manufacturing — soups, sauces, seasonings and instant meals — where mushrooms are an ingredient rather than a centerpiece.

A practical sourcing rule

Serious buyers qualify one supplier per format, not one supplier for everything. A vertically integrated grower with its own composting, fresh packing and a QS-certified slicing & drying plant can cover two of the three lanes from a single audit — which is exactly how PortaBio is built.
